Three Easy Weekday Breakfasts

I’m not big breakfast person, but I do appreciate starting the day with a hearty meal so today i’m sharing three of my favorite easy weekday breakfasts, which include: Peanut Butter Overnight Oats, Avocado toast & waffles topped with lemon curd + mixed berries.

1. Avocado Toast – Serving Size: 1 Serving

YOU WILL NEED:
1 piece bread, I like  sourdough bread
1/4 cup greek yogurt
2 tablespoons guacamole
1 tablespoon lime juice
1/8 teaspoon lime zest
kosher salt, to taste
1 teaspoon red pepper flakes
1 teaspoon everything but the bagel seasoning
1/2 tablespoon feta cheese, crumbled

DIRECTIONS:
1. Make avocado lime crema by combining: greek yogurt, guacamole, lime juice, lime zest & kosher salt
2. Put bread in toaster
3. Spread avocado lime crema on toast and garnish with red pepper flakes, everything but the bagel seasoning & feta cheese. Enjoy at room temperature!

2. Peanut Butter Overnight Oats – Serving Size: 1 Serving

YOU WILL NEED:
1/3 cup unsweetened plain almond milk/non fat milk
2 tablespoons peanut butter
1 tablespoon maple syrup
1/2 cup rolled oats
1/4 cup apple, chopped into bite sized pieces
1/2 teaspoons cinnamon
1/4 cup Trader Joe’s Omega Trail Mix

DIRECTIONS:
1. Preheat oven to 350°F
2. Cut apples into bite sized pieces. Put cinnamon into a bowl, add chopped apples & mix throughly.
3. Bake apples for 15 minutes or until golden brown
4. Add almond milk, peanut butter and maple syrup to a mason jar or small jar with a lid. Add oats and stir until fully combined
5. Cover container & set in the refrigerator overnight
6. Garnish with cinnamon apples & omega trail mix. Enjoy at room temperature!

3. Waffles With Lemon Curd & Mixed Berries
– Serving Size: 1 Mini Waffle

YOU WILL NEED:
1 box vanilla cake mix + ingredients on the box
2.5 tablespoons lemon curd
1/4 cup berries, I like blueberries & strawberries, cut into bite sized pieces

DIRECTIONS:
1.  In the large bowl make cake batter following directions on the box
2. Heat waffle iron, add 1/4 cup of cake batter & cook until waffle is golden brown
3. Top waffle with lemon curd & berries
