Trader Joe’s Gingerbread Cake & Cookie Mix, 2 Ways

I always enjoy trying Trader Joe’s baking mixes and was very happy to get the gingerbread mix on my last visit to Trader Joe’s. I love how versatile the baking mixes are and I knew the gingerbread mix would make some festive waffles, muffins and cookies. Today, I’m sharing two recipes featuring the baking mix, which include waffles and muffins. Both are frosted with Trader Joe’s cannoli dip another new Trader Joe’s product I tried for the first time and topped with crushed peppermint. Additionally, both of these recipes would be perfect Christmas morning breakfast options or are just fun seasonal weekend brunch breakfast ideas.

1. Gingerbread Waffle With Cannoli Dip, Chocolate Chips and Peppermint – Serving Size: 1 Mini Waffle

Ingredients:
1 box Trader Joe’s Gingerbread Cake & Cookie Mix + ingredients listed on the box
3 tablespoons Trader Joe’s Cannoli Dip
1 tablespoon mini chocolate chips
1 tablespoon crushed peppermint

Directions:
1. Make Gingerbread Cake & Cookie Mix following directions on the box
2. Add 1/4 cup of Gingerbread Cake & Cookie batter to heated waffle iron and cook for 2.5 -3 minutes or until cooked through; Enjoy warm!

2. Gingerbread Muffins With Cannoli Dip & Peppermint – Serving Size: 3 Mini Muffins

Ingredients:
1 box Trader Joe’s Gingerbread Cake & Cookie Mix + ingredients listed on the box
3 tablespoons Trader Joe’s Cannoli Dip
1 tablespoon crushed peppermint

Directions:
1. Preheat oven to 350°F
2. Make Gingerbread Cake & Cookie Mix following directions on the box
3. Put a heaping tablespoon of batter into three mini muffin crevices, bake for 12-15 minutes or until golden brown an toothpick inserted into center comes out clear
4. Let muffins cool for 10-15 minutes. Frost each muffin with cannoli dip and garnish with crushed peppermint
