Trader Joe’s Middle Eastern Style Kebabs, 3 Ways

I found Trader Joe’s Middle Eastern Style Kebabs in the freezer section on a recent trip to Trader Joe’s and was excited to test them out. I used the meat in a variety of ways including on: toast, ramen and grain bowls. I like that this product tasted great microwaved and appreciate that the product is extremely versatile, which makes it the perfect addition to a quick, easy and filling weekday lunch or dinner.

1. Middle Eastern Style Kebab Harissa Grain Bowl – Serving Size: 1 Serving

Ingredients:
1 Trader Joe’s Middle Eastern Style Kebab, chopped
1/2 cup quinoa, cooked
1/3 cup sweet potato, cubed
1/3 cup cauliflower florets
1/3 cup chickpeas
1.5 teaspoon olive oil
1/8 teaspoon salt & pepper
1/4 teaspoon garlic, minced
2 teaspoons harissa paste
1 teaspoon greek yogurt
1/2 teaspoon honey
1/2 teaspoon lemon juice
1 tablespoon feta, crumbled

Directions:
1. preheat oven to 400°F
2. Peel sweet potato & cut into chunks
3. In a large mixing bowl combine sweet potato & cauliflower florets with olive oil, garlic, salt & pepper
4. Bake for 25-30 minutes or until tender & browned
5. Meanwhile, cook quinoa according to direction on package
6. Once quinoa and roasted vegetables are cooked and cool microwave Middle Eastern Style Kebab for 1 minute or until heated through
7. Put quinoa, roasted veggies, chickpeas and chopped kebab into a bowl. Add harissa paste, greek yogurt, honey and lemon juice; mix throughly. Enjoy warm!

2. Kebab, Roasted Tomato, Arugula & Mozzarella Toast – Serving Size: 1 Serving

Ingredients:
1 Trader Joe’s Middle Eastern Style Kebab, chopped
1/3 cup cherry tomatoes
1 teaspoon olive oil
1/8 teaspoon salt & pepper
1/4 teaspoon garlic, minced
1 piece bread, cut in half
1/3 cup arugula
1/3 cup mozzarella cheese, shredded

Directions:
1. Preheat oven to 350°F
2. Microwave kebab for one minute or until heated through and chop into bite sized pieces
3. Combine cherry tomatoes, olive oil, salt, pepper and garlic in a small bowl; mix throughly
4. Put bread on baking sheet. Top with kebab, cherry tomatoes, arugula and cheese
5. Bake toast for 8-10 minutes or until bread is golden brown and enjoy warm!

3. Ramen Kebab – Serving Size: 2 Servings

Ingredients:
1 Trader Joe’s Middle Eastern Style Kebab, chopped
1 package ramen
1/3 cup broccoli florets, cooked
1 teaspoon lime juice
1/4 teaspoon furikake seasoning
1/8 teaspoon chili onion crunch

Directions:
1. Make ramen following directions on package
2. Microwave kebab and broccoli for 1 minute or until heated through
3. Add kebab and broccoli to cooked ramen. Top with furikake seasoning and chili onion crunch. Enjoy warm!
