Trader Joe’s Chicken Meatballs, 2 Ways

One of my favorite home cooked meals is spaghetti and meatballs and therefore, I’ve frequently purchased Trader Joe’s precooked turkey meatballs so I can always make my favorite pasta dish. I’ve also enjoyed using the turkey meatballs for meatball grinders/toasts and as ground turkey filling for tacos, lettuce wraps, stuffed sweet potatoes, etc. On a recent trip to Trader Joe’s I was very excited to see precooked chicken meatballs, which I knew would pair perfectly with Trader Joe’s seasonal pumpkin alfredo sauce. Today, I’m sharing two of my chicken meatball creations which include a meatball naan pizza and chicken chili dish. I really enjoyed the chicken meatballs and I hope you try them out as well and when you do you’ll have some quick and easy recipes for inspiration!

Chicken Meatball Naan Pizza – Serving Size: 1 Personal Size Flatbread Pizza

Ingredients:
1 piece of Trader Joe’s Tandoori Naan
3 Trader Joe’s Precooked Chicken Meatballs
1/4 cup Holiday Vegetable Hash
1 teaspoon cooking oil
1/4 cup brussels sprouts, halved
1 teaspoon olive oil
1/4 teaspoon garlic, minced
1/8 teaspoon salt & pepper
1/4 cup Pumpkin Alfredo Sauce or Vodka Sauce
1/4 cup mozzarella cheese, shredded

Directions:
1. Preheat oven to 400°F
2. Combine Brussels Sprouts, olive oil, garlic, salt & pepper on a baking sheet; mix throughly. Bake for 20 -25 minutes or until crispy and lightly charred
3. Meanwhile, put cooking oil of your choice in a sauté pan. Add holiday hash and sauté for 10-15 minutes or until cooked through
4. Turn oven down to 350°F
5. Microwave three chicken meatballs for 1.5 minutes or until heated through, cut each meatball in half
6. Put naan on a baking sheet. Top with sauce, cooked holiday hash, roasted Brussels sprouts, chicken meatball and mozzarella cheese.
7. Bake for 8-10 minutes or until cheese is golden brown; enjoy warm!

Chicken Chili – Serving Size: 1 Serving

Ingredients:
2 precooked chicken meatballs
1/4 cup kidney beans or red beans
2 tablespoons fire roasted diced tomatoes
1 teaspoon Chili Lime Seasoning Blend
1/4 cup Mexican style rice
1/4 cup Trader Joe’s Spicy Mexican-Style Riced Cauliflower
1 Tablespoon Mexican cheese blend (optional)

Directions:
1. Microwave chicken meatballs for 1.5 minutes or until heated through. Using your hands crush into ground turkey
2. In bowl combine beans, diced tomatoes, chili lime seasoning rice and riced cauliflower. Microwave for 2.5 – 3 minutes or until everything is heated through. Top with cheese if desired and serve warm!
