Today I’m sharing three of my favorite easy weekday lunches, which can help you upgrade from the typical sad desk lunch and give you something to look forward to throughout the week.
1. Romaine Salad With Apple, Feta & Omega Trail Mix – Serving Size: 1 Serving
YOU WILL NEED:
1/2 cup romaine lettuce, chopped
2 tablespoons apple, cut into bite sized pieces
1/4 cup Trader Joe’s omega trail mix
1 tablespoon feta
3 tablespoons + 1-1/2 teaspoons olive oil
2 tablespoons plus 2 teaspoons lemon juice
Salt & Pepper
DIRECTIONS:
1. Wash & chop salad greens
2. Cut apple into bite sized pieces
3. Add apple, omega trail mix & feta to salad greens
4. Make lemon & oil dressing by combining: olive oil, lemon juice, salt & pepper, mix throughly.
5. Add 1.5 tablespoons of dressing to greens, mix throughly & enjoy!
2. Teriyaki Chicken Grain Bowl – Serving Size: 1 Serving
YOU WILL NEED:
1/4 cup cooked chicken, shredded
1/4 cup of Trader Joe’s Shredded red & green cabbage with orange carrots
1/4 cup of frozen edamame
1 tablespoon coconut oil
1/2 cup rice/quinoa, cooked
3/4 cup Trader Joe’s Soyaki Sauce
DIRECTIONS:
1. Marinate cooked chicken with soyaki sauce for 15 minutes or overnight
2. Add cooked rice, marinated shredded chicken & cabbage in a bowl. Add coconut oil & microwave for 1.5 minutes or until heated through & enjoy warm!
3. Harissa Chicken, Chickpea & Ricotta Sandwich – Serving Size: 1 Serving
YOU WILL NEED:
1 piece bread, I like sprouted wheat sourdough bread
1/2 cup cooked chicken, shredded
1/4 cup chickpeas
1 teaspoon harissa paste
1/4 cup ricotta cheese
1 teaspoon hot honey
1/4 teaspoon red pepper flakes
DIRECTIONS:
1. Preheat oven to 350°F
2. Cut piece of bread in half
3. Put both slices of bread onto a cookie sheet. Spread cheese, hot honey & red pepper flakes onto one half of bread
4. Bake for 10 minutes until cheese is melted
5. While bread is in the oven add chickpeas, shredded chicken & harissa to bowl. Microwave for 1.5 minutes or until heated through
6. Add harissa chicken & chickpea mixture to empty half of bread & top with bread with ricotta. Enjoy warm!
