During cold winter days I crave comforting dishes such as Chili so today i’m sharing three awesome chili recipes.
1. Quinoa Cowboy Veggie Burger Chili – Serving Size: 2 Servings
YOU WILL NEED:
1 Trader Joe’s Quinoa Cowboy Veggie Burger, crumbled
1 teaspoon of vegetable oil
1/4 cup red kidney beans
2 tablespoons black beans
2 tablespoons fire roasted diced tomatoes
2 tablespoons of frozen corn, thawed
1/4 teaspoon cumin
1/4 teaspoon chili powder
1/2 cup rice, cooked
DIRECTIONS:
1. Heat veggie burger for 1 minute in microwave
2. Add veggie burger, kidney beans , diced tomatoes, frozen corn, cumin & chili powder to small pan & cook over low heat until beans & corn are heated through,
3. Serve over rice and add any desired toppings. Enjoy warm!
2. Turkey Chili – Serving Size: 2 Servings
YOU WILL NEED:
1 turkey burger, broken into bite-sized pieces
1 teaspoon of olive oil
1/2 clove garlic, minced
1 teaspoon of white onion, chopped
1/4 cup red kidney beans
2 tablespoons black beans
2 tablespoons fire roasted diced tomatoes
2 tablespoons of frozen corn, thawed
1/4 teaspoon cumin
1/4 teaspoon chili powder
1/2 cup rice, cooked
DIRECTIONS:
1. Heat sauté pan with olive oil once hot add onions, cook until translucent and then add turkey burger & cook until browned and cooked through. Once cooled break turkey burger into bite-sized pieces
2. Add garlic, kidney beans, black beans , diced tomatoes, frozen corn, cumin & chili powder to browned turkey & cook over low heat until beans & corn are heated through,
3. Serve over rice and add any desired toppings. Enjoy warm!
3. Chicken Chili – Serving Size: 2 Servings
YOU WILL NEED:
1/4 cup cooked chicken, shredded
1 teaspoon of vegetable oil
1/4 cup red kidney beans
2 tablespoons black beans
2 tablespoons fire roasted diced tomatoes
2 tablespoons of frozen corn, thawed
1/4 teaspoon cumin
1/4 teaspoon chili powder
1/2 cup rice, cooked
DIRECTIONS:
1. Add shredded chicken, kidney beans , diced tomatoes, frozen corn, cumin & chili powder to small pan & cook over low heat until beans & corn are heated through
2. Serve over rice and add any desired toppings. Enjoy warm!
