Whipped Feta & Roasted Tomato Board

Inspired by the viral TikTok feta pasta I decided to make a dinner board, which included: naan pizza, pasta shells & arugula salad, which all included: roasted tomatoes and whipped feta.

Whipped Feta & Roasted Tomato Naan Pizza
YOU WILL NEED:
1/4 cup cherry tomatoes
1 clove garlic, minced
1 tablespoon olive oil
1/4 teaspoon black pepper
1 tablespoon feta, crumbled
2.5 tablespoons greek yogurt
1 teaspoon lemon zest
1/4 teaspoon black pepper
2 tablespoons pesto
1 piece Naan

DIRECTIONS:
1. Preheat oven to 400ºF
2. Add tomatoes, olive oil, garlic & black pepper to a cookie sheet, mix throughly & bake for 20 minutes
3. While tomatoes are baking make whipped feta by combining: feta, greek yogurt & lemon zest; mix throughly
4. Put piece of naan onto baking sheet and top with pesto, roasted tomatoes & whipped feta. Bake for 10 minutes
5. Enjoy warm!

Whipped Feta, Roasted Tomato & Pesto Shells
YOU WILL NEED:
1/2 cup pasta shells
1/4 cup cherry tomatoes
1 clove garlic, minced
1 tablespoon olive oil
1/4 teaspoon black pepper
1 tablespoon feta, crumbled
2.5 tablespoons greek yogurt
1 teaspoon lemon zest
1/4 teaspoon black pepper
2 tablespoons pesto

DIRECTIONS:
1. Preheat oven to 350°F
2. Make pasta shells following the directions on the box
3. Add tomatoes, olive oil, garlic & black pepper to a cookie sheet, mix throughly & bake for 20 minutes
4. Make whipped feta by combining: feta, greek yogurt & lemon zest; mix throughly
5. Add cooked shells, tomatoes, whipped feta & pesto in a baking dish.
Bake for 10 minutes & enjoy warm!

Arugula, Roasted Tomato & Feta Salad

YOU WILL NEED:
1/4 cup cherry tomatoes
1 clove garlic, minced
1 tablespoon olive oil
1/4 teaspoon black pepper
1 tablespoon feta, crumbled
1 teaspoon balsamic vinegar
1/4 teaspoon dijon mustard
1/8 teaspoon black pepper
1/2 cup arugula

DIRECTIONS:
1. Add tomatoes, olive oil, garlic & black pepper to a cookie sheet, mix throughly & bake for 20 minutes
2. Make balsamic dressing by combining: olive oil, balsamic vinegar, dijon mustard & black pepper; mix throughly
3.  Add arugula, tomatoes, feta & balsamic dressing to a bowl,
enjoy at room temperature
