Trader Joe’s Quinoa Cowboy Veggie Burger, 3 Ways

For this week’s weekly foodspiration i’m spotlighting one of my favorite Trader Joe’s products, which is the Quinoa Cowboy Veggie Burger. These veggie patties are great alongside avocado crema for a guacamole burger and I love to use as taco and lettuce wrap filling as well. 

Quinoa Cowboy Veggie Guacamole Burger
1 Serving

What You’ll Need:
1 Trader Joe Quinoa Cowboy Veggie Burger
1 piece bread, cut in half
1/4 cup shredded cabbage
2.5 tablespoons guacamole
1 teaspoon greek yogurt
1/4 teaspoon lime juice
1/4 teaspoon cilantro, minced

Directions 
1. Preheat oven at 350°F
2. Put bread onto sheet pan & bake in oven  for 8-10 minutes or until cheese is bubbling
3. Add guacamole,  greek yogurt, lime juice & cilantro to bowl; mix throughly
4. Add guacamole and veggie burger to  bread & enjoy warm!

Quinoa Cowboy Veggie Burger Tacos
1 Serving

What You’ll Need:
2 flour tortillas
1/2 cup of Trader Joe’s Coleslaw
1/4 cup of mango, cut into bite-sized pieces
1 tablespoon of lime juice
1 tablespoon canola oil
1/2 teaspoon of honey
1/4 teaspoon of chili powder
1/8 teaspoon of salt
2 tablespoons of hot sauce
1/4 cup greek yogurt
2 tablespoons of guacamole
1 tablespoon lime juice
1/8 teaspoon of lime zest
Kosher salt, to taste
1 Trader Joe’s Quinoa Cowboy Veggie Burger Patty

Directions: 
1. Make your mango slaw by combining: coleslaw mix, chopped mango, lime juice, canola oil,
honey, chili powder & salt
2. Make avocado lime crema by combining: greek yogurt, guacamole, lime juice, lime zest & kosher salt
3. Heat tortillas
4. Add avocado lime crema to tortilla
5. Add cooked black bean quinoa burger to heated tortillas
 6. Top with mango slaw & enjoy tacos warm!

Quinoa Cowboy Veggie Burger Lettuce Wraps
1 serving

What You’ll Need:
3 Romaine Lettuce Leaves
1/4 cup greek yogurt
2 tablespoons of guacamole
1 tablespoon lime juice
1/8 teaspoon of lime zest
Kosher salt, to taste
1/2 cup cherry tomatoes, diced
2 tablespoons finely chopped red onion
1/4 tablespoon chopped cilantro
1/2 tablespoon extra virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon minced garlic
1/8 teaspoon ground black pepper
1 Trader Joe’s Quinoa Cowboy Veggie Burget Patty

Directions: 
1. Make avocado lime crema by combining: greek yogurt, guacamole, lime juice, lime zest & kosher salt
2. Make pico de gallo combine: cherry tomatoes, red onion, lime juice, chopped cilantro, extra virgin olive oil, kosher salt, minced garlic & black pepper
3. Add avocado lime crema to romaine lettuce leaves
4. Cook quinoa cowboy veggie burger according to directions on package & add to center of lettuce leaves
5. Top lettuce leaves with pico de gallo & enjoy!
