Trader Joe’s Coconut Shrimp, 2 Ways

On a recent trip to Trader Joe’s I picked up a package of coconut shrimp and have been experimenting using the shrimp in various different recipes. Today, I’m sharing two of my coconut shrimp creations. These easy weekday meals include: coconut shrimp ramen and coconut shrimp naan pizza. The coconut shrimp are also great to use for shrimp tacos or you can use as protein for a grain bowl. I hope you enjoy!

1. Coconut Shrimp Ramen, Serving Size: 2 servings [1/2 cup, each]

Ingredients:
1 package Ramen Noodles
6 pieces of coconut shrimp
1/3 cup frozen broccoli florets, defrosted
1/3 cup coleslaw kit
1 teaspoon furikake seasoning
1 teaspoon chili onion crunch

Directions:
1. Preheat oven to 450°F
2. Cook coconut shrimp according to directions on the package
3. Meanwhile, cook ramen noodles + broccoli according to directions on the ramen package
4. Add cooked shrimp to ramen, top with coleslaw mix, furikake seasoning and chili onion crunch. Enjoy warm!

2. Coconut Shrimp Naan Pizza, Serving Size: 1 Serving

Ingredients:
1 piece Trader Joe’s tandoori naan
3 pieces Trader Joe’s coconut shrimp
1/3 cup coleslaw kit
1.5 teaspoon greek yogurt
1 teaspoon Trader Joe’s peri peri sauce
1 tablespoon mozzarella cheese

Directions:
1. Preheat oven to 400°F
2. Cook coconut shrimp for 10 minutes. Meanwhile, make sauce for pizza by combining peri peri sauce and greek yogurt; mix throughly
3. After 10 minutes take shrimp out of oven. Spread peri peri sauce onto naan, top with shrimp, coleslaw mix and cheese. Put shrimp pizza into oven and bake for 5 minutes or until cheese is golden brown. Enjoy warm!
