TJ’s Lemony Arugula Salad Kit, 3 Ways

I’m a big fan of Trader Joe’s salad kits and one of my favorites is the Lemony Arugula Basil Salad Kit. I decided to experiment with some different recipes using the salad kit as the base and wanted share some of my quick and easy meal ideas, which includes: breaded chicken with lemony arugula & roasted tomatoes, lemony arugula and roasted tomato spaghetti and a lemony arugula and whipped feta dip appetizer!

1. Breaded Chicken, Lemony Arugula & Roasted Tomato – Serving Size: 1

YOU WILL NEED:
1 Breaded Chicken Tenderloin Breast
1/4 cup Trader Joe’s Lemony Arugula Basil Salad Kit
2 tablespoons cherry tomatoes
1 teaspoon olive oil
1/4 teaspoon garlic, minced
1/8 teaspoon black pepper

DIRECTIONS:
1. Preheat oven to 400°F
2. Combine cherry tomatoes, olive oil, garlic & black pepper on baking sheet; mix throughly & bake for 20-25 minutes or until tomatoes are roasted
3. Meanwhile follow directions on package to cook breaded chicken
4. Put arugula mix and dressing in small bowl; mix throughly
5. Once chicken and tomatoes are cooked top chicken with tomatoes and arugula. Enjoy warm!

2. Lemony Arugula & Roasted Tomato Spaghetti – Serving Size: 2 Servings [1/4 cup each serving]

YOU WILL NEED:
1/2 cup spaghetti
1/4 cup Trader Joe’s Lemony Arugula Basil Salad Kit
2 tablespoons cherry tomatoes
1 teaspoon olive oil
1/4 teaspoon garlic, minced
1/8 teaspoon black pepper

DIRECTIONS:
1. Preheat oven to 400°F
2. Combine cherry tomatoes, olive oil, garlic & black pepper on baking sheet; mix throughly & bake for 20-25 minutes or until tomatoes are roasted
3. Meanwhile cook spaghetti following directions on package
4. Put arugula mix and dressing in small bowl; mix throughly
5. Once spaghetti and tomatoes are cooked top spaghetti with tomatoes and arugula. Enjoy warm!

3. Lemony Arugula & Whipped Feta Dip – Serving Size: 1 serving

YOU WILL NEED:
1/4 cup Trader Joe’s Lemony Arugula Basil Salad Kit
2 tablespoons cherry tomatoes
1 teaspoon olive oil
1/4 teaspoon garlic, minced
1/8 teaspoon black pepper
2 tablespoons feta cheese, crumbled
1 teaspoon non-fat greek yogurt
1/8 teaspoon lemon zest
1/4 cup pita chips

DIRECTIONS:
1. Preheat oven to 400°F
2. Combine cherry tomatoes, olive oil, garlic & black pepper on baking sheet; mix throughly & bake for 20-25 minutes or until tomatoes are roasted
3. Meanwhile combine: feta cheese, greek yogurt & lemon zest; mix throughly
4. Add arugula, dressing and roasted tomatoes to feta mixture; mix throughly & enjoy along with pita chips
