Three Easy Weekday Dinners

After a long work day I want a 15 minute meal so I can  get dinner on the table quickly and then can relax and unwind. If you’re like me here are three of my favorite easy weekday dinners.

1. Peanut Satay Ground Turkey Lettuce Wraps – Serving Size: 4 Lettuce Wraps

Peanut Satay Ground Turkey Lettuce Wraps

YOU WILL NEED:
1/2 Trader Joe’s turkey burger
1/4 cup Trader Joe’s Asian Style Spicy Peanut Vinaigrette
1/4 cup quinoa
2.5 tablespoons frozen peas
2.5 tablespoons shredded carrots
2.5 tablespoons of frozen edamame
1/2 tablespoon coconut oil
3 cabbage/romaine lettuce leaves

DIRECTIONS:
1. Cook quinoa according to directions on package
2. In a small pan cook turkey burger for 3 minutes per side. Once cooked let cool & crumble into ground turkey. Add spicy peanut vinaigrette
3. Meanwhile, heat frozen vegetables & coconut oil in microwave safe bowls for 1.5 minutes or until heated through
4. Wash lettuce leaves. Add 2 tablespoons of: peanut turkey mixture, heated vegetables & quinoa to each lettuce leaf. Enjoy warm!

2. Vegetable Naan Pizza – Serving Size: 1 Personal Size Flat Bread Pizza

YOU WILL NEED:
½ cup of Trader Joe’s Miso alla Griglia
1 piece of Trader Joe’s Sliced Lite Cheddar, broken into small pieces
1 piece of Trader Joe’s tandoori naan

DIRECTIONS:
1. Set oven to 350° degrees
2. Thaw the veggies by heating in the microwave for 1 minute
3. Put piece of naan onto cookie sheet covered with tin foil
4. Add thawed veggies on top of naan, then add cheddar pieces and top with balsamic glaze
5. Bake for 10-12 minutes, until cheese is melted &  enjoy warm!

3. Shrimp Tacos – Serving Size: 2 Tacos

Shrimp Tacos

YOU WILL NEED:
6 peeled & deveined shrimp, defrosted
2 tablespoons frozen roasted corn, defrosted
2 tablespoons greek yogurt
1.5 teaspoons Trader Joe’s chili lime seasoning
1 teaspoon of hot sauce
1 teaspoon lime juice
2 tablespoons Trader Joe’s Shredded Green & Red Cabbage
2 tablespoons quinoa, cooked
1/4 cup refried beans
2 tortillas

DIRECTIONS:
1. Prepare your mango slaw by combining: coleslaw mix, mango and the sweet dressing, mix throughly
2. Sauté shrimp in medium sauté pan on medium heat for 6 minutes or until heated through
3. While shrimp cook combine greek yogurt, chili lime seasoning, hot sauce & lime juice in a small bowl; mix throughly
4. Microwave corn for 30 seconds or until heated through
5. Add Shrimp, corn, quinoa & coleslaw to buffalo mixture
6. Heat tortilla for 30 seconds until warm. Spread refried bean over tortilla & heat for another 30 seconds or until heated through. Add shrimp mixture & enjoy warm!
