I’m a big fan of butternut squash soup and recently tried The Little Beet’s chef’s soup bowl, which is butternut squash soup, roasted chicken, basmati rice, sautéed greens, super seeds and chimichurri sauce. It was such a hearty and filling soup and the flavor combination of the chicken, chimichurri sauce and butternut squash worked so well together that I decided to recreate using Trader Joe’s Butternut Squash Soup as the base and I added cooked chicken, spicy jollof rice and chimichurri, which resulted in an amazing easy weekday lunch/dinner side dish.
My Adaptation: The Little Beet’s Chef Soup Bowl – Serving Size: 1 Serving
YOU WILL NEED:
1 cup Trader Joe’s Butternut Squash Soup
2.5 tablespoons cooked chicken, shredded
2.5 tablespoons Trader Joe’s Spicy Jollof Rice
2.5 tablespoons Trader Joe’s Chimichurri Sauce
DIRECTIONS:
1. Cook rice following directions on package
2. Heat soup following directions on package
3. Add rice, cooked chicken & chimichurri to soup; mix throughly & enjoy
