Since the Super Bowl is taking place on Sunday for today’s weekly foodspiration I’m sharing a Super Bowl board, which features:
– Buffalo Chicken Cornbread Waffle Sliders
– Spinach & Ricotta Yogurt Dip
– Tortilla Chips
– Mexican-Style Cauliflower Rice
Buffalo Chicken Cornbread Waffle Slider
YOU WILL NEED:
Trader Joe’s cornbread mix + ingredients listed on box
1/4 cup cooked chicken, shredded
1 tablespoons hot sauce
1.5 teaspoons plain greek yogurt
1/2 teaspoon lime juice
2 tablespoons Trader Joe’s Number Guacamole
1 teaspoon greek yogurt
1/4 teaspoon garlic, minced
1/2 teaspoon lime juce
1/2 tablespoon black beans
1/2 tablespoon frozen corn, defrosted
1/2 teaspoon of fire roasted diced tomatoes
1 teaspoon lime juice
DIRECTIONS:
1. Make cornbread batter by following directions on box, add 1/4 cup of batter to heated waffle iron & cook under golden brown
2. Make buffalo chicken filling by combining: shredded chicken, hot sauce, greek yogurt & lime juice
3. Make avocado yogurt dip by combining: guacamole, greek yogurt, garlic & lime juice
4. Make black bean & corn salsa by combining: black beans, corn, dicd tomatoes & lime juice
5. Add shredded chicken, avocado yogurt dip & black bean and corn salsa to cornbread waffle, enjoy warm!
Spinach & Ricotta Yogurt Dip
YOU WILL NEED:
1/4 cup frozen spinach, defrosted
1.5 tablespoon ricotta
2 teaspoons non-fat greek yogurt
1/2 teaspoon lemon juce
1/4 teaspoon garlic, minced
1/2 teaspoon parmesan cheese
DIRECTIONS:
1. Preheat oven to 350°F
2. Add all ingredients to a bowl, mix throughly
3. Bake dip for 8-10 minutes
4. Enjoy warm!
