For this week’s foodspiration i’m featuring a snack board, which includes: graham crackers, strawberry yogurt dip & strawberry shortbread cookie cups.
Mini Strawberry Shortbread Cookie Cups
YOU WILL NEED:
1/2 cup (1 stick) unsalted butter, softened
1 cup all-purpose flour
1/4 cup confectioner’s sugar
1 tablespoon whipped cream
1 strawberry, cut into bite sized pieces
DIRECTIONS:
1. Preheat oven to 350°F
2. Make shortbread dough by combining: butter, flour, confectioner’s sugar
3. Scoop 1 tablespoon of batter into mini muffin tin crevices
4.Cook cookie cups for 12-15 minutes or until shortbread is golden brown
5. Let cookies cool and then fill with whipped cream & strawberry
Strawberry Yogurt Dip
YOU WILL NEED:
2 tablespoons greek yogurt
1/8 teaspoon vanilla extract
1/8 teaspoon honey
2 strawberries, cut into bite sized pieces
DIRECTIONS:
Combine greek yogurt, vanilla extract, honey & strawberries; mix throughly!
