To kick off this year’s St. Patrick’s Day celebrations I treated myself to an Irish coffee from Stella & Fly, which is an adorable coffee shop + wine bar on the Upper East side, NYC. The coffee drink inspired me to create some breakfast and dessert treats featuring Baileys Irish Cream!

Vanilla Waffles With Baileys Coffee Yogurt Topping – Serving Size: 1 Mini Waffle

YOU WILL NEED:
1 box vanilla cake mix + ingredients on the box
2 tablespoons boiling water
1 tablespoon Trader Joe’s 100% Colombian Instant Coffee
1/4 teaspoon Baileys Irish Cream
2 tablespoons non-fat greek yogurt
1/8 teaspoon vanilla extract
1 teaspoon chocolate chips, crushed [optional]

DIRECTIONS:
1. In the large bowl make cake batter following directions on the box
2. Heat waffle iron, add 1/4 cup of cake batter & cook until waffle is golden brown
3.Make vanilla baileys coffee  yogurt topping by combining  instant coffee, water and Baileys Irish Cream and vanilla extract in a small bowl; Mix throughly. Add bailey’s mixture to separate bowl with vanilla yogurt
4. Top waffle with vanilla bailey’s coffee yogurt topping  & crushed chocolate chips if desired

Mini Muffins With Baileys Coffee Yogurt Topping – Serving Size: 3 Mini Muffins

YOU WILL NEED:
Trader Joe’s Vanilla Cake Mix + Ingredients listed on box
2 tablespoons boiling water
1 tablespoon Trader Joe’s 100% Colombian Instant Coffee
1/4 teaspoon Baileys Irish Cream
2 tablespoons non-fat greek yogurt
1/8 teaspoon vanilla extract
1 teaspoon chocolate chips, crushed [optional]

DIRECTIONS:
1. Preheat oven to 350°F
2. Follow directions on cake mix to make batter, add a heaping tablespoon of batter to 3 mini cupcake liners & bake cupcakes for 15 minutes or until golden grown
3. While cupcakes cool make vanilla baileys coffee yogurt topping by combining instant coffee, water and Baileys Irish Cream and vanilla extract in a small bowl; Mix throughly. Add bailey’s mixture to separate bowl with vanilla yogurt
4. Frost cupcakes with baileys coffee topping and garish with crushed chocolate chips if desired

Mini Chocolate Baileys Cupcakes – Serving Size: 3 Mini Cupcakes
YOU WILL NEED:
Trader Joe’s Vanilla Cake Mix + Ingredients listed on box
1 tablespoon chocolate chips, melted
1/4 teaspoon Baileys Irish Cream
2 tablespoons non-fat greek yogurt
1 teaspoon chocolate chips, crushed [optional]

DIRECTIONS:
1. Preheat oven to 350°F
2. Follow directions on cake mix to make batter, add a heaping tablespoon of batter to 3 mini cupcake liners & bake cupcakes for 15 minutes or until golden grown
3. While cupcakes cool make chocolate baileys topping by combining: melted chocolate, Bailey’s Irish Cream and yogurt
4. Frost cupcakes with chocolate baileys topping and garish with crushed chocolate chips if desired
