In honor of St. Patrick’s Day, which is on Wednesday, March 17 today i’m featuring four St. Patrick’s day desserts including: mint chocolate chip dip, mini chocolate brownie cups, chocolate chip shortbread cookie sandwiches & mini shamrock shakes.

Mini Mint Chip Brownie Cups
YOU WILL NEED:
1 box brownie mix + ingredients on the box
1 tablespoon cool whip
1 teaspoon vanilla yogurt
1/8 teaspoon peppermint extract
2 drops green food coloring
1 tablespoon mini chocolate chips
DIRECTIONS:
1. Preheat oven to 350ºF
2. Make brownie batter following directions on the box
3. Scoop 1 tablespoon of batter into desired number of mini muffin crevices
4. Cook brownies for 15 minutes or until fully cooked through. While brownies cook make mint chip dip by combining: cool whip, vanilla yogurt, peppermint extract & green food coloring
5. Let brownies cool & then frost with mint chip dip
Chocolate Chip Shortbread Cookie Sandwiches
YOU WILL NEED:
1/2 cup (1 stick) unsalted butter, softened
1 cup all-purpose flour
1/4 cup confectioner’s sugar
2 drops green food coloring
1 tablespoon mini chocolate chips
1/4 cup cool whip
2 tablespoon mini chocolate chips
DIRECTIONS:
1. Preheat oven to 350ºF
2. Make shortbread dough by combining: butter, flour, confectioner’s sugar, chocolate chips & green food coloring 3. Scoop 1 tablespoon of batter onto a greased cookie sheet
4. Cook cookies for 15 minutes or until fully cooked through. While cookies cook make chocolate chip cool whip filling by combining: cool whip & chocolate chips
5. Let cookies cool & then put cool whip filing in the center of one cookie and top with second cookie
Mini Shamrock Shakes
YOU WILL NEED:
1 tablespoon milk
1 mini vanilla haagen dazs cup
2 drops green food coloring
2 tablespoons cool whip
1 tablespoon mini chocolate chips
DIRECTIONS:
1. Add: milk, vanilla haagen dazs cup & green coloring to a blender & blend until smooth
2. Top with cool whip & mini chocolate chips
