While we starting to inch towards spring and had some nice spring like weather over the weekend today we are back to a little bit of colder weather, which means I’m trying to enjoy the last of soup season. When the tik tok roasted tomato and feta craze started it reminded me how much I enjoy roasted tomatoes and what a good addition they are to salads, sandwiches, naan pizzas, pastas, etc. I also decided to turn the roasted tomatoes into a soup and had some extra feta so I decided to include some whipped feta into the soup to enhance the flavor. The end result was a super simple and flavorful soup that will definitely be a part of my winter soup rotation.
Roasted Tomato Soup With Whipped Feta
YOU WILL NEED:
1/4 cup cherry tomatoes
1 clove garlic, minced
1 tablespoon olive oil
1/4 teaspoon black pepper
1 tablespoon feta, crumbled
2.5 tablespoons greek yogurt
1 teaspoon lemon zest
1/4 teaspoon black pepper
1.5 cups of chicken stock
DIRECTIONS:
1. Preheat oven to 400ºF
2. Add tomatoes, olive oil, garlic & black pepper to a cookie sheet, mix throughly & bake for 20 minutes
3. While tomatoes are baking make whipped feta by combining: feta, greek yogurt & lemon zest; mix throughly
4. Add roasted tomatoes, whipped feta & chicken stock to a blender and blend until smooth
5. Enjoy warm!
