Ramen, 5 Ways

One of my favorite easy & affordable weeknight meals is upgraded stovetop/instant ramen and today i’m sharing five ramen adaptations, which includes: red curry ramen, peanut satay ramen, ramen & wanton soup, general tso’s chicken katsu ramen & ramen and shrimp with a hard boiled egg.

1. Red Curry Ramen – Serving Size: 1 Serving

YOU WILL NEED:
1/4 cup Trader Joe’s Thai Style Red Curry Sauce
2 tablespoons of water
1 package of Trader Joe’s Miso Instant Ramen Soup
1/2 cup frozen shrimp, thawed
1/4 cup of frozen peas
1/4 cup of shredded carrots
1/4 cup of frozen edamame
1 tablespoon of minced ginger
ground pepper to taste
optional: cilantro, green onion & lime wedge

DIRECTIONS:
1. Add ginger and shrimp to saute pan and cook for 2-4 minutes per side
2. Add Trader Joe’s Thai Style Red Curry Sauce a majority of the way to the fill line indicated on ramen container. Fill remainder of the way with water
3. Add your veggies to the noodle mixture & microwave for 2 minutes or until noodles and vegetables are fully cooked. Add any of the optional ingredients if using & enjoy warm!

2. Peanut Satay Ramen – Serving Size: 1 Serving

YOU WILL NEED:
1 package of chicken ramen
2 tablespoons broccoli florets
1.5 tablespoons shredded cabbage
1 tablespoon peanut butter
1 teaspoon lime juice
1 teaspoon greek yogurt
1/4 teaspoon chili onion crunch
1/4 teaspoon furikake seasoning

DIRECTIONS:
1. Boil water, add ramen and broccoli florets and follow directions on ramen package
2. Meanwhile, make peanut satay by combining: peanut butter, lime juice & greek yogurt; mix throughly
3. Combine ramen and broccoli mixture with shredded cabbage and peanut sauce; mix throughly. Garnish with chili onion crunch and furikake seasoning

3. Ramen, Shrimp & Hard Boiled Egg – Serving Size: 1 serving

YOU WILL NEED:
1 egg
1 cup of Trader Joe’s Ginger Miso Broth
1/4 cup of frozen peas
1/4 cup of shredded carrots
1/4 cup of frozen edamame
1 package of Maruchan ramen noodle soup, whatever flavor you like best
1/2 cup of frozen shrimp, defrosted
1 tablespoon of minced ginger
ground pepper to taste

DIRECTIONS:
1. Make a soft boiled egg by adding 1 inch of water to sauce pot, cover, bring to a boil, add an egg and boil for six minutes. After six minutes remove from pot run egg under cool water and then peel
2. Make ramen following directions on package. I use ginger miso broth instead of water
3. While egg and ramen is cooking add ginger and shrimp to sauté pan and cook for 2-4 minutes per side
4. Prepare vegetables by microwaving: carrots, edamame & peas. I like to add some coconut oil to veggies to give some added flavor
5. Once ramen noodles are cooked add egg, veggies, shrimp and pepper to noodle mixture & enjoy warm

4. General Tso’s Chicken Katsu Ramen – Serving Size: 1 Serving

YOU WILL NEED:
1 package of chicken ramen
2 tablespoons broccoli florets
1.5 tablespoons shredded cabbage
1 tablespoon peanut butter
1 Trader Joe’s Breaded Chicken Tenderloin Breast
1/4 cup Trader Tsao’s Stir Fry Sauce
1/4 teaspoon chili onion crunch
1/4 teaspoon furikake seasoning

DIRECTIONS:
1. Boil water, add ramen and broccoli florets and follow directions on ramen package
2. Meanwhile, cook breaded chicken in microwave following directions on package  & cut into bite sized pieces
3. Combine ramen and broccoli mixture with shredded cabbage, breaded chicken & general tsao’s sauce; mix throughly
4. Garnish with chili onion crunch and furikake seasoning  & enjoy!

5. Ramen Wanton Soup – Serving Size: 1 Serving

YOU WILL NEED:
2 cups trader Joe’s miso ginger broth
1 package of stove top ramen noodles
4 Trader Joe’s chicken cilantro mini wantons
1 teaspoon coconut oil
1/4 cup of bok choy, cooked
1 teaspoon ginger, minced

DIRECTIONS:
1. Cook ramen according to the directions on the package using miso ginger broth in place of water and don’t add flavoring packet at the end
2. While ramen is cooking roughly chop bok chop and cook in saute pan with oil for about 5 minutes or until lightly brown
3. Using a steamer or microwave cook chicken cilantro mini wantons according to directions on the package
4. Add bok choy and chicken cilantro mini wantons to cooked ramen, enjoy warm!
