Today I’m sharing an easy veggie burger recipe using Trader Joe’s Quinoa Cowboy Veggie Burger, which I topped with a guacamole spread, shredded cabbage and melted blue cheese. This meal tastes like a gourmet restaurant quality burger and comes together in under 15 minutes!
Quinoa Cowboy Veggie Guacamole Burger
YOU WILL NEED:
1 Trader Joe Quinoa Cowboy Veggie Burger
1 piece bread, cut in half
1/4 cup shredded cabbage
2.5 tablespoons guacamole
1 teaspoon greek yogurt
1/4 teaspoon lime juice
1/4 teaspoon cilantro, minced
1/4 cup blue cheese, crumbled
DIRECTIONS:
1. Preheat oven at 350°F
2. Put bread onto sheet pan, spread blue cheese on one half & bake in oven for 8-10 minutes or until cheese is bubbling
3. Add guacamole, greek yogurt, lime juice & cilantro to bowl; mix throughly
4. Add guacamole, shredded cabbage & veggie burger to second piece of toasted bread. Top with the bread with melted cheese & enjoy warm!
