Pumpkin Bread & Muffin Mix, 3 Ways

I know this time of year becomes pumpkin overload and to be perfectly honest I’m not a big fan of a majority of the pumpkin products, but the one item I continually buy and look forward to each year is Trader Joe’s pumpkin bread & muffin mix. Today, i’m sharing three easy breakfast recipes, which all feature the mix and a maple cinnamon yogurt spread.

1. Pumpkin Waffles With Maple Cinnamon Yogurt Spread – Serving Size: 1 Mini Waffle

Ingredients:
1 box Trader Joe’s Pumpkin Bread & Muffin Mix + ingredients listed on the box
2 teaspoons greek yogurt
1/8 teaspoon maple syrup
1/8 teaspoon cinnamon 
1 tablespoon apple, chopped 
1/8 teaspoon cinnamon

Directions:
1.  Preheat oven to 350°F
2.  Make Pumpkin Bread & Muffin Mix batter following directions on the box
3. Cut apples into bite-sized pieces and mix with cinnamon 
4. Bake cinnamon apples for 12-15 minutes or until golden brown
5. Meanwhile, heat waffle iron and fill with 1/4 pumpkin bread & muffin mix batter. Bake waffle until cooked through and golden brown
6. While waffle is cooking make yogurt spread by combining: greek yogurt, maple syrup and cinnamon; mix throughly
7. Cut waffle into four pieces, top with yogurt spread and cinnamon apples; enjoy warm!

2. Pumpkin Muffins With Maple Cinnamon Yogurt Spread – Serving Size: 3 Mini Muffins

Ingredients:
1 box Trader Joe’s Pumpkin Bread & Muffin Mix + ingredients listed on the box
2 teaspoons greek yogurt
1/8 teaspoon maple syrup
1/8 teaspoon cinnamon 
1 tablespoon apple, chopped 
1/8 teaspoon cinnamon

Directions:
1.  Preheat oven to 350°F
2.  Make Pumpkin Bread & Muffin Mix batter following directions on the box
3. Put a heaping tablespoon of pumpkin bread & muffin mix batter into three mini muffin tin crevices
4. Cut apples into bite-sized pieces and mix with cinnamon
5. Bake muffins and cinnamon apples for 15 – 20 minutes or until toothpick inserted into cookie cups comes out clean and apples are browned. Note: apples most likely will be finished before the muffins
6. Meanwhile, make yogurt spread by combining: greek yogurt, maple syrup and cinnamon; mix throughly
7. Once cool top with yogurt spread and cinnamon apples

3. Mini Pumpkin Donuts With Maple Cinnamon Yogurt Spread – Serving Size: 3 Mini Donuts

Ingredients:
1 box Trader Joe’s Pumpkin Bread & Muffin Mix + ingredients listed on the box
2 teaspoons greek yogurt
1/8 teaspoon maple syrup
1/8 teaspoon cinnamon 
1 tablespoon apple, chopped 
1/8 teaspoon cinnamon
Optional: Reese’s Peanut Butter Cups, Chopped

Directions:
1.  Preheat oven to 350°F
2.  Make Pumpkin Bread & Muffin Mix batter following directions on the box
3. Put a heaping tablespoon of pumpkin bread & muffin mix batter into greased mini donut tin
4. Cut apples into bite-sized pieces and mix with cinnamon
5. Bake donuts and cinnamon apples for 15 – 20 minutes or until toothpick inserted into cookie cups comes out clean and apples are browned. Note: apples most likely will be finished before the muffins
6. Meanwhile, make yogurt spread by combining: greek yogurt, maple syrup and cinnamon; mix throughly
7. Once cool top with yogurt spread, cinnamon apple & Reese’s Peanut Butter Cups
