For today’s weekly foodspiration post I’m sharing two recipes featuring Trader Joe’s Pesto Rosa. The first recipe is a Pesto Chicken Tartine and the second recipe is a Pesto Vegetable Ravioli.
Pesto Chicken Tartine
Serving size: 1 Toast
What You’ll Need:
1 piece bread
2 tablespoons Trader Joe’s Pesto Rosa
1 chicken tender, cooked
1/4 cup roasted vegetables [see recipe below]
1/4 cup ricotta
1 teaspoon lemon zest
1/4 teaspoon red pepper flakes
Directions:
1. Preheat oven to 350°F
2. Combine chicken roasted vegetables and pesto, mix thoroughly
3. Put vegetable mixture on bread, top with ricotta, lemon zest & red pepper flakes
4. Bake for 10 minutes & enjoy warm!
Roasted Vegetables
Serving Size: 4 Cups
What You’ll Need:
1 Zucchini, diced
1 eggplant, diced
1 container cherry tomatoes
1 tablespoon olive oil
1 clove garlic, minced
1/4 teaspoon salt & pepper
Directions:
1. Preheat oven to 400°F
2. Add vegetables, olive oil, garlic, salt & pepper to sheet pan & roast for 45 minutes or until tender & browned
NOTE: I let vegetables cool and then put into a freezer safe container and freeze to preserve for longer use
Pesto Butternut Squash Ravioli with Roasted Vegetables
Serving Size: 1 Cup
You’ll Need:
1/2 container butternut squash ravioli, cooked
2 tablespoons Trader Joe’s Pesto Rosa
1/4 cup roasted vegetables [see recipe below]
1/4 cup arugula
2 tablespoons parmesan cheese
Directions:
1. Cook ravioli according to directions on package
2. Combine cooked ravioli, roasted vegetables, arugula and pesto, mix thoroughly
3. Garnish with parmesan cheese & enjoy warm!

Serving Size: 4 Cups
