Peanut Satay Soba Noodles

Peanut sesame noodles are one of my favorite quick & easy meals. I especially love that these taste even better cold, which means that you can make ahead of time and then store in the fridge and then have ready to go for an easy weekday lunch!

PEANUT SATAY SOBA NOODLE RECIPE
SERVING SIZE: 1 Serving, Double For Leftovers

YOU WILL NEED:
1/3 cup soba noodles
1 tbsp. pure sesame oil
1/2 tbsp. peanut butter
1 tbsp. honey
1/2 tbsp. soy sauce
1/2 tbsp. rice vinegar
1/2 clove garlic, minced
2 tbsp. frozen peas
2 tbsp. shredded carrots
1 tbsp. coconut oil
2 tbsp. frozen edamame
OPTIONAL: Slice of lime, cilantro & scallion

DIRECTIONS:
1. Boil water
2. Cook noodles in boiling water for 8 minutes or until noodles
are fully cooked
3. Make peanut satay sauce by combining: peanut butter, honey, soy sauce, rice vinegar & garlic
4. Heat frozen vegetables: edamame, peas, shredded carrots with
coconut oil in microwave for 1 minute
5. Add peanut sauce & heated vegetables to soba noodles.
Top with optional garnishes
6. Enjoy!
