This week my foodspiration is oranges and I’m sharing a recipe for an orange yogurt dip and mini orange cupcakes, which are frosted with yogurt dip and garnished with strawberries and orange segments.
Orange Yogurt Dip
YOU WILL NEED:
2 tablespoons greek yogurt
1/8 teaspoon vanilla extract
1/8 teaspoon honey
2 tablespoons orange juice
1/4 teaspoon orange zest
DIRECTIONS:
Combine greek yogurt, vanilla extract, honey, orange juice & orange zest; mix throughly!
MINI ORANGE CUPCAKES
YOU WILL NEED:
1 box vanilla cake mix + ingredients on the box [I replaced oil with orange juice + added 1/4 teaspoon orange zest]
2 tablespoons greek yogurt
1/8 teaspoon vanilla extract
1/8 teaspoon honey
2 tablespoons orange juice
1/4 teaspoon orange zest
1 strawberry & 1 piece of orange, cut into bite sized pieces
DIRECTIONS:
1. Preheat oven to 350°F
2. Make cake mix according to directions on the box
3. Scoop 1 tablespoon of batter into mini muffin tin crevices
4. Cook cupcakes for 12-15 minutes or until shortbread is golden brown
5. Let cupcakes cool. While they cook combine: yogurt, honey, orange juice + orange zest to make yogurt dup
6. Frost cupcakes with yogurt dip & garnish with strawberries & orange
