Today’s foodie adventure is inspired by Manna Toast Cafe, which is located in Westport, CT and has an extensive menu of toasts, salads, soups & baked goods. I was inspired to create an adaptation of their meatless meatball toast using Trader Joe’s meatless meatballs as an easy shortcut and replaced the cashew mozzarella with ricotta cheese.
