On a recent Trader Joe’s trip I bought their pumpkin bread mix and have been having a lot of fun testing different recipes using the pumpkin bread batter. Today, I’m sharing a recipe for mini pumpkin muffins, which I decided to top with maple glaze & cinnamon crumble. This is a yummy Fall treat, which I’ve been enjoying as a breakfast along with my morning cup of coffee!
INGREDIENTS:
1 box Trader Joe’s Pumpkin bread mix + ingredients listed on box
1/2 cup powdered sugar
1/8 teaspoon cinnamon
1/2 tablespoon very soft butter
1/4 teaspoon vanilla
2 tablespoons maple syrup
2.5 tablespoons flour
1 tablespoon butter, room temperature
1 tablespoon brown sugar
1/8 tespoon cinnamon
DIRECTIONS:
- Preheat oven to 400°F
- Make pumpkin bread batter following directions on box
- Put mini cupcake liners into mini muffin tin & put 2 heaping tablespoons of batter in each liner
- Bake for 15 minutes or until golden brown
- While muffins cool make glaze by combining: powdered sugar, cinnamon, butter, vanilla, maple syrup & flour in a bowl; mix throughly
- Make cinnamon crumble by combining: flour, butter, brown sugar & cinnamon to a bowl; mix throughly
- Frost cooled muffins with maple glaze & top with crumble topping
