Mini Huevos Racheros Tortilla Cups

Huevos Rancheros is one of my favorite brunch dishes so today i’m sharing my adaptation, which entails mini tortilla cups that are filled with Mexican style eggs and topped with avocado crema. These are perfect to serve along avocado toast to make a complete restaurant quality brunch from the comfort of your own home!

Mini Huevos Racheros Tortilla Cups
Serving Size: 3 Mini Cups

What You’ll Need: 
1 tortilla
1 egg
1 tablespoon black beans
1 tablespoon frozen corn kernels
1 teaspoon fire roasted diced tomatoes
3 teaspoons refried beans
2 tablespoons of guacamole
1 tablespoon Greek yogurt
1 tablespoon lime juice

Directions:
1. Preheat oven to 350°F
2. Combine egg, black beans, corn & fire roasted diced tomatoes. Mix thoroughly
3. Cut tortilla into 4 pieces.  Put tortilla pieces into 3 mini muffin cup cavities and form cups
4. Add teaspoon of refried beans to each cup
5. Add egg mixture to each cup & bake for 12 minutes or until eggs are set
6. Make avocado crema by combining guacamole, Greek yogurt & lime juice; mix thoroughly
7. Top mini tortilla cups with avocado crema & enjoy warm!
