I’ve been wanting to try Mighty Quinn BBQ for awhile and finally made it to the Upper East Side location, which is located between East 77th & East 78th Street & 2nd avenue and decided to try their pulled pork and sweet corn fritters, which were both amazing. I used those items on a board along with brown rice, tortilla chips and homemade black bean & corn salsa, which I used to make a grain bowl.

BLACK BEAN & CORN SALSA
INGREDIENTS:
2 tablespoons black beans
2 tablespoons frozen corn, defrosted
1 teaspoon diced & fire roasted tomatoes
1/2 teaspoon lime juice
1/4 teaspoon cilantro, chopped
salt & pepper, to taste
DIRECTIONS:
1. Combine all ingredients & mix throughly
