I love making simple tweaks to upgrade cake & muffin box mixes so for today’s quick & easy recipe i’m sharing a cornbread muffin recipe. These muffins are filled with a black bean & diced tomato egg mixture and are topped with crumbled blue cheese. The end result is a flavorful cornbread muffin cup that goes perfectly with avocado toast!
Mexican Style Cornbread Muffin Cups
YOU WILL NEED:
Cornbread mix + ingredients on the package
1 egg
1 tablespoon black beans
1/2 tablespoon fire roasted diced tomatoes
1.5 tablespoons blue cheese, crumbled
DIRECTIONS:
1. Preheat oven to 350°F
2. Make cornbread batter following directions on pacakage
3. Crack egg in medium size bowl. Add black beans and diced tomatoes, mix throughly
4. Add 1 tablespoon of cornbread batter to mini muffin crevice. Top with 1 teaspoon of egg mixture
& bluecheese crumbles
5.Bake for 15 minutes or until egg mixture is set & enjoy warm!
