Mediterranean quinoa grain bowls are one of my go to weekday meals and for this week’s quick & easy recipe I’m using the mediterranean quinoa in pita pockets with roasted garlic hummus!
MEDITERRANEAN QUINOA PITA POCKETS
Serving size: 2 servings
INGREDIENTS:
1/4 cup Trader Joe’s Misto Alla Griglia
2 tablespoons Trader Joe’s roasted cauliflower
2 tablespoons red wine vinegar
1/4 cup canola oil
1.5 tablespoons honey
1 clove garlic, minced
1/2 teaspoon harissa paste
1/8 teaspoon smoked paprika
dash of sea salt
1/2 cup cooked quinoa
1 whole wheat pita, cut in quarters
2 tablespoons roasted garlic hummus
DIRECTIONS:
- Cook quinoa according to directions on the package
- Microwave Trader Joe’s Misto Alla Griglia, cauliflower & chickpeas for 1 minute or until heated through
- Make honey harissa vinaigrette by adding: red wine vinegar, canola oil, honey, garlic, harissa paste, smoked paprika & sea salt to a small bowl, mix throughly
- Add quinoa and vegetables to a bowl & add 2.5 tablespoons of honey harissa vinaigrette
- Spread hummus into pita pocket, add quinoa mixture & enjoy warm
