For this week’s foodspiration I’m featuring baked cinnamon peaches two ways. The first recipe is shortbread cookie cups filled with vanilla ice cream and baked cinnamon peaches. I’ve also included a recipe for a yogurt parfait topped with cinnamon baked peaches, granola & shredded coconut.
Cinnamon Peach Shortbread Cookie Cups
YOU WILL NEED:
1/2 cup (1 stick) unsalted butter, softened
1 cup all-purpose flour
1/4 cup confectioner’s sugar
1/2 peach, cut into bite-sized pieces
1/2 teaspoon cinnamon
2 tablespoons vanilla ice cream
DIRECTIONS:
1. Preheat oven to 350°F
2. Make shortbread dough by combining: butter, flour, confectioner’s sugar
3. Scoop 1 tablespoon of batter into mini muffin tin crevices
4. Bake shortbread cookies & peaches for 12-15 minutes or until golden brown
Cinnamon Apple Yogurt Parfaits
YOU WILL NEED:
2.5 tablespoons non-fat greek yogurt
1/2 peach, cut into bite-sized pieces
1/2 teaspoon cinnamon
1 tablespoon granola
1 tablespoon shredded coconut
DIRECTIONS:
1. Preheat oven to 350°F
2. Add cut peaches & cinnamon to sheet pan
3. Bake peaches for 12-15 minutes or until golden brown
4. Add yogurt to bowl. Top with peaches, granola & shredded coconut
