In honor of Cinco de Mayo today’s foodie adventure is Taco Today, which is a fast casual Mexican restaurant located on the Upper East Side, NYC. I ordered a chicken fajita tostada and I made homemade Mexican corn nachos as a side dish.

Mexican Corn Nachos
YOU WILL NEED:
1/4 cup Trader Joe’s Mexican Style Roasted Corn
1/2 cup tortilla chips
1/4 cup shredded cheese
2.5 tablespoons cooked chicken, shredded
DIRECTIONS:
1. Cook Mexican style roasted corn according to the directions on the package
2. Add corn, tortilla chips, cheese & cooked chicken to a plate & microwave for 1 minute or until cheese is melted
3. Enjoy warm!
