Chocolate Pudding Shortbread Cookie Cups

On my most recent Trader Joe’s trip I bought their belgian chocolate pudding, which i’d been wanting to try for awhile now. I decided to use the pudding as filling in shortbread cookie cups and I used the leftover pudding to make mini chocolate pudding parfaits. Both desserts were topped with whipped cream & mini chocolate chips. This is a super simple and decedent dessert, which I’ll definitely be making on repeat.

Mini Chocolate Pudding Parfait Cups

YOU WILL NEED:
2 tablespoons Trader Joe’s Belgian Chocolate Pudding
1 tablespoon whipped cream
1 teaspoon mini chocolate chips

DIRECTIONS:
1. Add chocolate pudding to small cup
2. Top with whipped cream & mini chocolate chips

Chocolate Pudding Shortbread Cookie Cups
YOU WILL NEED:
1/2 cup (1 stick) unsalted butter, softened
1 cup all-purpose flour
1/4 cup confectioner’s sugar
3 tablespoons Trader Joe’s Belgian Chocolate Pudding
1.5 tablespoons whipped cream
3 teaspoons mini chocolate chips

DIRECTIONS: 
1. Preheat oven to 350°F
2. Make shortbread dough by combining: butter, flour, confectioner’s sugar
3. Scoop 1 tablespoon of batter into mini muffin tin crevices
4. Cook cookie cups for 12-15 minutes or until shortbread is golden brown
5. Let cookies cool and then fill with chocolate pudding, whipped cream & mini chocolate chips
