My latest foodie adventure was chicken insider, which is a Korean-style fried chicken restaurant located on the Upper East Side, NYC. I ordered the Seoul Chicken Sandwich, which consisted of dark meat fried chicken, spring mix, sliced pickled radish, sweet chili sauce and served on a brioche hamburger bun. This was definitely one of the best chicken sandwiches I have had and I loved the combination of the chicken with the chili sauce. I also enjoyed a side of french fries and I made a kale salad with honey soy ginger dressing.
Kale Salad With Honey Soy Ginger Dressing
YOU WILL NEED:
1/4 cup shredded kale
1 tablespoon edamame
1 tablespoon brown rice, cooked
1/2 tablespoon Trader Joe’s Riced Cauliflower Stir Fry
1 tablespoon shredded carrots
1 tablespoon 365 by whole foods honey soy ginger marinade
DIRECTIONS:
1. Microwave riced cauliflower, shredded carrots & edamame, if frozen for 30 seconds or until heated through
2. Add brown rice, carrots & marinade to riced cauliflower; mix thoroughly
