Since it’s been a cold start to the year here in NYC i’ve been craving soups so today i’m sharing a recipe for cannellini soup, which includes: mirepoix, cannellini beans, chicken broth, rice & sausage. I highly recommend making a big batch of soup over the weekend and then you can reheat for quick and healthy lunches/dinners throughout the week!
Cannellini Bean Soup
4 Servings
What You’ll Need:
1/2 container Trader Joe’s Mirepoix
1/2 clove garlic
1 link of Trader Joe’s Roasted Garlic Sausage
1/2 can Cannellini Beans
1/2 cup of Rice, cooked
1.5 cups of Chicken Broth
Directions:
1. Sautée mirepoix for 5 minutes or until vegetables are soft
2. Heat sausage in microwave for 1 minute or until heated through
3. Add chicken broth, sausage, cannellini beans and rice to mirepoix.
4. Simmer until broth starts to boil; enjoy warm!
