Buffalo Shrimp & Corn Tacos

For today’s quick & easy recipe I’m sharing a shrimp taco recipe with a little heat, which comes from a buffalo sauce that combines greek yogurt, hot sauce and the star of the dish is Trader Joe’s chili lime seasoning. This a perfect weekday dinner that comes together in under 15 minutes.

Buffalo Shrimp & Corn Tacos

YOU WILL NEED:
6 peeled & deveined shrimp, defrosted
2 tablespoons frozen roasted corn, defrosted
2 tablespoons greek yogurt
1.5 teaspoons Trader Joe’s chili lime seasoning
1 teasoon of hot sauce
1 teaspoon lime juice
2 tablespoons Trader Joe’s Shredded Green & Red Cabbage
2 tablespoons quinoa, cooked
1/4 cup refried beans
2 tortillas

DIRECTIONS: 
1. Sauté shrimp in medium sauté pan on medium heat for 6 minutes or until heated through
2. While shrimp cook combine greek yogurt, chili lime seasoning, hot sauce & lime juice in a small bowl; mix throughly
3. Microwave corn for 30 seconds or until heated through
4. Add Shrimp, corn, quinoa  & coleslaw to buffalo mixture
5. Heat tortilla for 30 seconds until warm. Spread refried bean over tortilla & heat for another 30 seconds or until heated through.  Add shrimp mixture & enjoy warm!
