Black Bean Quesadilla & Black Bean Dip

For today’s foodspiration I’m featuring black beans two ways. I’m first sharing an easy black bean and yogurt dip, which is an excellent appetizer or snack, which I like to serve with carrots and/or tortilla chips. The second recipe is a black bean & cheese quesadilla, which is a perfect quick & easy weekday lunch or dinner.

Black Bean Dip
YOU WILL NEED:
2.5 tablespoons black beans
1 tablespoon non-fat greek yogurt
1/4 teaspoon lime juice
1/4 teaspoon Trader Joe’s Chili Lime seasoning
1 teaspoon cotija cheese

DIRECTIONS:
1. Add black beans, greek yogurt, lime juice & chili lime seasoning to a small bowl; mix throughly
2. Garnish with cotija cheese

Black Bean Quesadilla
YOU WILL NEED:
2.5 tablespoons black beans
1 tablespoon non-fat greek yogurt
1/4 teaspoon lime juice
1/4 teaspoon Trader Joe’s Chili Lime seasoning
1 Tortilla
2 tablespoons blue cheese, crumbled
2 tablespoons mozzarella
1 tablespoon greek yogurt
1/2  teaspoon lime juice
1/4 teaspoon lime zest

DIRECTIONS:
1. Add black beans, greek yogurt, lime juice & chili lime seasoning to a small bowl; mix throughly
2. Put black bean mixture & cheese in center of tortilla & fold tortilla over filling
3. Microwave for 45 seconds or until cheese is melted
4. Combine greek yogurt, lime juice & lime zest to make lime crema
5. Top quesadilla with lime crema & enjoy warm!
