I constantly walk by the bareburger located around the corner from my apartment and have never tried it until this past weekend when I decided to treat myself to a sweet dreams veggie burger, french fry & drink special. I decided to pair my burger and fries combo with a homemade kale, tomato & feta salad to make my meal a little bit healthier.
Kale, Tomato & Feta Salad with Lemon Dressing
YOU WILL NEED:
1/4 cup sautéed kale
1 tablespoon brown rice/quinoa, cooked
2 tablespoons olive oil
1 clove garlic, minced
3 tomatoes
1.5 teaspoon red onion
1 teaspoon olive oil
1/4 teaspoon honey
1/8 teaspoon red pepper flakes
2 teaspoons feta, crumbled
1 tablespoon olive oil
1 teaspoon lemon juice
1/4 teapoon lemon zest
1/4 teaspoon honey
1/8 teaspoon salt
1/8 teaspoon black pepper
DIRECTIONS:
- Roast tomatos in oven at 400°F on a sheet pan drizzled with olive olive & garlic. Cook for 20 minutes or until tomatoes are soft & begin to burst
- In a pan sauté kale in pan with a little olive oil and chopped onion for 5 minutes or until kale is cooked through
- In a separate pan saute chopped red onion with a 1 teaspoon olive oil for 5 minutes or until translucent. Add honey and red pepper flakes
- Make dressing by combining: olive oil, lemon juice, lemon zest, honey salt & pepper; mix throughly
- Add kale, tomatoes, onion, cooked brown rice/quinoa & feta to bowl. Add lemon dressing, mix throughly & enjoy at room temperature
