I love snickerdoodle cookies so I decided to experiment and ended up developing a fun adaptation of the classic cookie, which is perfect for the Fall/Winter season. These snickerdoodle cookie cups are filled with Duncan Hines Spice Cake Mix and are topped with cream cheese frosting and baked cinnamon apples.
Snickerdoodle Spice Cake Cups with Cream Cheese Frosting and Baked Apples – 10 Mini Muffin Cups
INGREDIENTS –
Snickerdoodle Dough (Adapted from: add a pinch’s shortbread crust recipe) –
1/2 cup (1 stick) salted butter (I only had unsalted butter so i just added 1/4 teaspoon of salt to my butter), softened
1 cup all-purpose flour
1/4 cup confectioner’s sugar
1/4 cup granulated sugar
1 tablespoon ground cinnamon
1 box Duncan Hines Spice Cake Mix + ingredients listed on the box
Cream cheese frosting (store-bought or your favorite homemade cream cheese frosting recipe)
Baked Cinnamon Apples –
1/4 cup of red apple, chopped into bite sized pieces
2 tablespoons ground cinnamon
RECIPE –
1. Preheat oven to 350º F
2. Mix together butter, flour and confectioner’s sugar in a medium size bowl to make shortbread cookie dough and form into a ball shape
3. In a separate small bowl combine cinnamon and granulated sugar
4. Roll shortbread cookie dough ball into cinnamon sugar mixture
5. Grease 6 cavities of a mini muffin tin (I like to use spray vegetable oil to grease the pan)
6. Put 1.5 heaping tablespoons of shortbread cookie dough into each of the 6 mini muffin cavities. Form dough in each cavity into a cup shape, I like to add extra cinnamon sugar mixture into each cookie cup
7. In a big bowl combine duncan hines spice cake mix and all ingredients listed on box and make spice cake batter
8. Put 1 heaping teaspoon of spice cake batter in the middle of each shortbread cookie dough cavity
9. Put 2 tablespoons of cinnamon into a small bowl
10. Add chopped apple to bowl of cinnamon and mix throughly
11. Put cinnamon apple pieces onto greased baking sheet
12. Bake snickerdoodle spice cake cups and cinnamon apples for 12 – 15 minutes or until cookie cups are golden brown and toothpick inserted into spice cake center comes out clean and apples are tender
13. Give cookie cups and baked apple pieces a chance to cool and then fill with cream cheese frosting and garnish with baked apple pieces
14. Enjoy warm!
