Holiday Vegetable Hash, 3 Ways

One of the Trader Joe’s seasonal products I look forward to the most during the thanksgiving season is holiday vegetable hash. I’ve enjoyed using this assortment of root vegetables and herbs in soups, salads, sandwiches, naan pizzas, pastas and more. Today, I’m sharing three new recipes featuring the holiday vegetable hash, which include: a tuna melt, naan pizza and a chicken noodle soup.

1. Holiday Vegetable Hash Naan Pizza – Serving Size: 1 Personal Size Pizza

Ingredients:
1 piece Trader Joe’s Tandoori Naan
1 link Trader Joe’s smoked apple chardonnay chicken sausage, diced
1/4 cup Trader Joe’s holiday vegetable hash
2.5 tablespoons mozzarella cheese

Directions:
1. Preheat oven to 350°F
2. Sauté holiday vegetable hash following directions on the package
3. Microwave sausage for 1 minute or until cooked through
4. Put naan on baking sheet and top with cooked holiday vegetable hash, sausage and mozzarella cheese
5. Bake pizza for 10 minutes or until cheese is melted. Serve warm and enjoy!

2. Tuna & Holiday Vegetable Hash Melt – Serving Size: 1/2 sandwich

Ingredients:
1/4 cup Trader Joe’s Holiday Vegetable Hash
1/3 cup yellowfin tuna in olive oil
1 tablespoon pumpkin puree
1 teaspoon harissa
1.5 tablespoons greek yogurt
1 piece sourdough bread [or bread of choice], cut in half
2.5 tablespoons mozzarella

Directions:
1. Preheat oven to 350°F
2. Sauté holiday vegetable hash following directions on the package
3. In a small bowl combine: tuna, pumpkin puree, harissa and greek yogurt; mix throughly
4. Put bread on baking sheet and top each half with tuna mixture, cooked holiday vegetable hash and mozzarella
5. Bake tuna melt for 8-10 minutes or until cheese is melted. Serve warm and enjoy!

3. Chicken and Holiday Vegetable Hash Noodle Soup – Serving Size: 4 servings [1/4 cup/per serving]

Ingredients:
1/2 cup macaroni pasta
1/4 cup Trader Joe’s holiday vegetable hash
1/2 cup cooked chicken, shredded
1.5 cups chicken broth

Directions:
1. Cook macaroni following directions on package
2. Meanwhile, sauté holiday vegetable hash following directions on the package
3. Add cooked macaroni, holiday vegetable hash and shredded to heated chicken broth and enjoy warm!
