3 Easy Fall Recipes

After picking up my Trader Joe’s Fall haul I was energized and inspired to start cooking some fall dishes. Today, i’m sharing three of those dishes, which include: Tacos, Naan Pizza and Chicken Parmesan! 

1. Butternut Squash & Black Bean Tacos – Serving Size: 1 Serving

YOU WILL NEED:
2  taco shells/tortillas
1/4 cup butternut squash, cubed 
1/4 teaspoon olive oil
1/2 clove garlic, minced
2 tablespoons black beans
2 tablespoons Trader Joe’s harvest grains, cooked
1/4 cup shredded cabbage/coleslaw mix 
2.5 tablespoons Trader Joe’s Fall Harvest salsa 

DIRECTIONS: 

1. Preheat oven to 400°F
2. Combine butternut squash, olive oil and garlic. Bake for 35 minutes or until tender and soft; let cool 
3. Turn oven down to 350°F and bake taco shells for 5 minutes
4.Combine butternut squash, black beans and cooked harvest grains. Fill each taco shell with butternut squash mixture.
5.Top tacos with shredded cabbage/coleslaw mix and fall harvest salsa; enjoy warm! 


2. Butternut Squash & Sausage Naan Pizza – Serving Size: 1 Serving

YOU WILL NEED:
1 Tandoori Naan 
1/4 cup butternut squash, cubed 
1/4 teaspoon olive oil
1/2 clove garlic, minced
1 link sweet apple chicken sausage, chopped into bite sized pieces 
2 tablespoons Trader Joe’s pumpkin chipotle roasting sauce
1/4 cup arugula
1/2 cup shredded mozzarella cheese 

DIRECTIONS: 
1. Preheat oven to 400°F
2. Combine butternut squash, olive oil and garlic. Bake for 35 minutes or until tender and soft; let cool 
3. Turn oven down to 350°F. Put naan onto baking sheet and top with pumpkin chipotle roasting sauce, chicken sausage, butternut squash, arugula and mozzarella cheese
4. Bake naan pizza for 10 minutes or until cheese is melted and golden brown.
Enjoy warm!

3. Pumpkin Chicken Parmesan – Serving Size: 1 Serving

YOU WILL NEED:
1 piece Trader Joe’s breaded chicken
1/4 cup Trader Joe’s pumpkin chipotle roasting sauce
2 tablespoons marinara sauce
1/2 cup shredded mozzarella cheese 
2.5 tablespoons arugula

DIRECTIONS: 
1. Preheat oven to 350°F
2. Combine pumpkin chipotle roasting sauce and marina sauce
3. Put sauce, mozzarella and arugula onto breaded chicken
4. Bake for 10 minutes or until cheese is melted and golden brown. Enjoy warm!
