Cowboy Caviar Guacamole

Cowboy caviar has been all over Instagram and TikTok this summer so today I’m sharing a fun guacamole adaptation.
For my version I used Trader Joe’s Number Guacamole to Go as the base and then added greek yogurt to make my dip slightly creamier.
Finally, I incorporated the cowboy caviar ingredients: black beans, corn and chickpeas into the avocado mixture to finish off the dip.
I served the guacamole in mini bread cups for a fun appetizer and used the remaining guacamole as a dip for tortilla chips!

Cowboy Caviar Guacamole – Serving Size: 1 serving [1/3 Cup]
Ingredients:
1 piece of bread, cut into quarters
1 package Trader Joe’s Avocado’s Number Guacamole to Go
1/2 tablespoon non-fat plain greek yogurt
1 teaspoon black beans
1 teaspoon roasted corn
1 teaspoon chickpeas
1/4 teaspoon lime juice

Directions:
1. Preheat oven to 350°F
2. Put pieces of bread into mini muffin tin crevices and bake for 8-10 minutes or until bread is golden brown
3. Meanwhile, make guacamole dip by combining: guacamole, greek yogurt, black beans, roasted corn, chickpeas and lime juice; mix throughly
4. Finally, put a heaping tablespoon of guacamole mixture into each mini bread cup, serve remaining dip along with tortilla chips and enjoy!
