I’m kicking off Easter weekend with a festive Cadbury mini egg dessert board, which features: Trader Joe’s Blood Orange Cake Mix with Icing, Cadbury yogurt dip and slice and bake cookies!
1. Cadbury Mini Egg Blood Orange Cupcakes – Serving Size: 4 Mini Cupcakes
YOU WILL NEED:
1 box Trader Joe’s Blood Orange Cake Mix & Icing + ingredients listed on box
4 tablespoons lemon curd
12 cadbury mini eggs
DIRECTIONS:
1. Preheat oven to 350°F
2. Make blood orange cake batter following directions on the box
3. Scoop 1 heaping tablespoon of cake batter in 4 mini muffin crevices and bake for 15 minutes or until toothpick inserted into cupcakes comes out clean
4. Let cupcakes cool for 10 minutes then frost with lemon curd, garnish with cadbury mini eggs & enjoy!
2. Cadbury Mini Egg Yogurt Dip – Serving Size: 1 Serving
YOU WILL NEED:
2 tablespoons non-fat greek yogurt
1/4 teaspon vanilla extract
1 teaspoon honey
1 tablespoon cadbury mini eggs
blood orange slices & graham crackers (optional)
DIRECTIONS:
1. Combine all ingredients in a small bowl, mix throughly & enjoy!
Note: I served with graham crackers and blood orange slices
3. Cadbury Mini Egg Chocolate Chip Cookies – Serving Size: 2 Cookies
YOU WILL NEED:
2 slice & bake chocolate chip cookies
1 tablespoon cadbury mini eggs
DIRECTIONS:
1. Preheat oven to 350°F
2. Put slice & bake cookies on baking sheet, add cadbury mini eggs to cookie dough & bake for 12 minutes or until cookies are golden brown. Enjoy warm!
