One of my favorite NYC desserts is Chip City cookies. I recently tried their signature funfetti sugar cookie and decided to make my own adaptation using shortbread cookie dough and rainbow sprinkles. I also love a good mini cookie cup so I’m sharing a rainbow shortbread & white chocolate cookie cup recipe as well!
Funfetti Shortbread Cookies
2 Cookies
YOU WILL NEED:
1/4 cup unsalted butter, softened
1/2 cup all-purpose flour
2 tablespoons confectioner’s sugar
2 tablespoons rainbow sprinkles
2 tablespoons white chocolate melted
1 tablespoon rainbow sprinkles
DIRECTIONS:
1. Preheat oven at 350°F
2. Make funfetti shortbread dough by combining: butter, flour, confectioner’s sugar & sprinkles
3. Scoop 1 tablespoon of batter onto baking sheet
4. Bake for 12 minutes or until golden brown & enjoy warm!
Funfetti Shortbread Cookie Cups Filled With White Chocolate
3 Mini Cookie Cups
YOU WILL NEED:
1/4 cup unsalted butter, softened
1/2 cup all-purpose flour
2 tablespoons confectioner’s sugar
2 tablespoons rainbow sprinkles
2 tablespoons white chocolate melted
1 tablespoon rainbow sprinkles
DIRECTIONS:
1. Preheat oven at 350°F
2. Make funfetti shortbread dough by combining: butter, flour, confectioner’s sugar & sprinkles
3. Scoop 1 tablespoon of batter into mini muffin tin crevices
4. Bake for 12 minutes or until golden brown
5. As cookie cups cool microwave white chocolate chips with a teaspoon of water for 15-30 seconds. Stir until smooth
6. Fill cookie cups with chocolate, top with sprinkles & enjoy warm!
