Peri Peri Salmon Rice Bowl

Today I’m sharing a recipe inspired by the TikTok salmon rice bowl videos, which have been trending recently. For my adaptation I used canned salmon, which I marinated in: Trader Joe’s Peri Peri sauce, greek yogurt, lime juice & ginger and then I put that over riced cauliflower stir fry quinoa mixture and topped with edamame and furikake seasoning. I had never tried canned salmon before so I wasn’t sure what to expect, but this healthy grain bowl will definitely be incorporated into my monthly recipe rotation!

Peri Peri Salmon Rice Bowl
2 Servings

YOU WILL NEED:
1 can Trader Joe’s Alaskan Wild Pink Salmon
2 tablespoons greek yogurt
4 tablespoons Trader Joe’s Peri Peri Sauce
1 teaspoon lime juice
1 tablespoon ginger, minced
1/4 cup Trader Joe’s Riced Cauliflower Stir Fry
1/4 cup quinoa, cooked
1/4 cup edamame, cooked
1 teasppon furikake seasoning

DIRECTIONS: 
1. Make sauce by combining: greek yogurt, peri peri sauce, limej juice & ginger in a medium bowl. Add salmon & mix throughly
2. Add riced cauliflower stir fry, quinoa & edamame to salmon mixture
3. Microwave rice bowl for 1.5 minutes or until heated through
4. Top with furikake seasoning & enjoy!
