Chimichurri Chicken Taco

Happy Tuesday! For today’s taco Tuesday I’m featuring a quick and easy chimichurri chicken taco recipe. I love this chimichurri sauce because it’s extremely versatile and can be used on any type of meat or vegetables! I served my tacos with a Mexican style rice bowl, but some rice and beans or black bean soup would be other great side dish options. 

Chimichurri Chicken Tacos
2 Servings

YOU WILL NEED:
2 tortillas
1/2 cup cooked chicken, shredded
1/2 teasppon red wine vinegar
1 tablespoon olive oil
1 tablespoon lime juice
1 tablespoon cilantro, chopped
1/4 teaspoon red chili pepper flakes
1/4 cup refried beans
1 package Trader Joe’s Avocado number guacamole
1 tablespoon greek yogurt
1/2 tablespoon lime juice

DIRECTIONS: 
1. Combine red wine vinegar, olive oil lime juice, cilantro & red chili pepper flakes to make chimichurri sauce. Add shredded chicken & mix thoroughly
2. Microwave tortillas & refried beans for 2 minutes or until heated through
3. Make avocado crema by combining: guacamole, greek yogurt & lime juice
4. Top heated tortillas with chimichurri chicken & avocado crema. Enjoy warm!
