For today’s foodspiration i’m featuring a Roasted Tomato, Spinach & Whipped Feta Dip, which is great spread on toast, crackers or you can use as a dip for carrots, celery or bell peppers.

Roasted Tomato, Spinach & Whipped Feta Dip
YOU WILL NEED:
1 cup cherry tomatoes
1 clove garlic, minced
1 tablespoon olive oil
1 tablespoon feta, crumbled
2.5 tablespoons greek yogurt
1 teaspoon lemon zest
1/4 teaspoon black pepper
1/2 tablespoon frozen spinach, defrosted
DIRECTIONS:
1. Preheat oven to 350°F
2. Add tomatoes, olive oil, garlic & black pepper to a cookie sheet, mix throughly & bake for 20 minutes
3. Make whipped feta by combining: feta, greek yogurt & lemon zest; mix throughly
4. Put bread in toaster
5. Microwave spinach until heated through. Combine: roasted tomatoes, cooked spinach & whipped feta. Mix throughly & spread on toast
