This past year i’ve gotten really into turning my leftovers into soup so for today’s quick & easy recipe I’m featuring an easy carrot ginger soup recipe, which is perfect for spring when the weather is getting a little warmer, but it’s still cold enough to enjoy a nice warm bowl of soup!
Carrot Ginger Soup
YOU WILL NEED:
1/2 teaspoon coconut oil
2 tablespoon yellow onion, diced
1/4 cup carrots
2 cups vegetable broth
1 tablespoon greek yogurt
1 teaspoon ginger, minced
1/4 teaspoon honey
DIRECTIONS:
1. Heat oil in medium saucepan, add onion & carrot and sauté for 5-8 minutes until softened
2. Add carrot mixture, vegetable broth, greek yogurt, ginger & honey to blender and blend until smooth
3. Enjoy warm!
