For today’s quick & easy recipe I’m featuring a fun weekend brunch recipe, which turns a 3 ingredient peanut butter cookie batter into a waffle, which I topped with a peanut butter & chocolate chip yogurt dip and garnished with raspberries.
Peanut Butter Waffle
YOU WILL NEED:
1/4 cup peanut butter
1/4 cup sugar
1 egg
1.5 tablespoons non fat plain greek yogurt
2 tablespoons peanut butter
1 teaspoon honey
1/8 teaspoon vanilla extract
1 tablespoon mini chocolate chip
Raspberries for garnish, optional
DIRECTIONS:
1. Make peanut butter cookie batter by combining: peanut butter, sugar & egg; mix throughly
2. Heat waffle iron & add 1/4 cup of batter to waffle iron. Cook until golden brown
3. Make yogurt topping by combining: greek yogurt, peanut butter, honey, vanilla extract & mini chocolate chips;
mix thoroughly. Add raspberries & enjoy warm!
