Cookies and Cream Board

This week’s foodspiration is cookies & cream, which is a classic dessert flavor combination. Today’s dessert board features cookies & cream shortbread cookie cups, cookie & cream yogurt dip and oreo cookies.

Cookies & Cream Shortbread Cookie Cups

YOU WILL NEED:
1/2 cup (1 stick) unsalted butter, softened
1 cup all-purpose flour
1/4 cup confectioner’s sugar
2 tablespoons Oreo cookies, crushed
1/4 cup cool whip
1.5 tablespoons Oreo cookies, crushed

DIRECTIONS:
1. Preheat oven to 350ºF
2. Make shortbread dough by combining: butter, flour, confectioner’s sugar & 2 tablespoons crushed oreos
3. Scoop 1 tablespoon of batter into mini muffin tin crevices
4. Cook cookie cups for 12-15 minutes or until shortbread is golden brown
5. Let cookie cups cool & then put cool whip filing in the center of each cookie cup & add additional crushed oreo for garnish
