Apple Cider Muffins with Baked Cinnamon Apples & Maple Glaze

One of my favorite fall treats is apple cider donuts so today i’m sharing a muffin variation of the classic apple cider donut, which are topped with baked cinnamon apples & maple glaze, which I originally featured a few weeks ago in my mini pumpkin muffin recipe.

INGREDIENTS:
1 box of yellow cake mix

1 cup apple cider

1 egg

1/4 cup melted butter

1 teaspoon of nutmeg

2 teaspoon cinnamon

1/2 cup apple, cut into bite sized pieces

1 teaspoon cinnamon

1/2 cup  powdered sugar

1/8 teaspoon cinnamon

1/2 tablespoon butter, softened

1/4 teaspoon vanilla

2 tablespoons maple syrup

DIRECTIONS:

  1. Set oven to 350°F
  2.  Make apple cider muffin batter by combining: yellow cake mix, apple cider, egg. nutmeg & cinnamon; mix throughly
  3. Add batter to mini muffin crevices & bake for 15 minutes or until golden brown
  4.  Make cinnamon apples by combining: apples & cinnamon. Bake for 15 minutes or until golden brown
  5. While muffins & apples are baking make maple glaze by combining: powdered sugar, cinnamon, butter, vanilla & maple syrup; mix throughly
  6.  Let muffins cool,  frost with maple glaze & top with baked cinnamon apples
